Why 11×14 Cuts Things Off
11×14 is 11:14, very nearly but not exactly 4:5. That near-miss is the trap: a photo already prepared for an 8×10 still doesn't fit an 11×14, and the difference is small enough that people don't check before ordering. It's also a common mat size, where the opening is smaller again than the frame.

Is 11×14 the same shape as 8×10?
Close, but no. 8×10 is exactly 4:5 and 11×14 is 11:14, so a file prepared for one gets trimmed slightly by the other. Extending to the exact size you're ordering avoids that.
How much extra should I allow for a mat?
A mat usually covers about a quarter-inch on each edge. Extending the scene means that overlap comes out of generated background rather than out of your subject.
